Prep Time5 minsCook Time10 minsTotal Time15 mins Course: DessertCuisine: Low-Carb/Keto, Paleo/Dairy Free Option Servings: 2 servings IngredientsFor the Rice Pudding1 8 oz. bag Miracle Rice (see below)1 tablespoon heavy cream (or coconut milk)1 scoop Perfect Keto chocolate collagen powder (see below)Dash of sea saltDash of cinnamon1 tablespoon nut butter I used Legendary Foods Chocolate Peanut ButterFor the Toppings (optional)1 tablespoon sugar-free whipped cream5 almonds roughly chopped1 tablespoon sugar-free chocolate chips (see below) InstructionsIn a small sauce pan, bring 1 cup of water to a boil. Meanwhile, rinse and drain Miracle Rice thoroughly. When water begins to boil. add miracle rice and cook for 3 minutes. Drain and return to sauce pan on low-heat. Let any remaining water evaporate and then add heavy cream, protein powder, salt, and cinnamon and stir to combine. Cook pudding over low heat for 5 to 10 minutes until it thickens, stirring often. Divide rice into two servings and top with whipped cream, almonds, and chocolate chips. Enjoy!
