Meanwhile, in a small skillet over medium-high heat cook bacon until crisp. In another small skillet, add butter over medium heat and let melt. Once melted, add spinach, mushrooms, salt, and pepper. Sauté until spinach is wilted and mushrooms are soft, about 3 minutes. Add whisked eggs to the spinach and mushroom mixture and cook, pushing eggs into the center until set around the edges. Flip one side over to form omelette. Remove pan from heat and top with 1 tablespoon cheddar cheese. Let it melt while preparing your plate. Add broccoli to your plate and top with remaining cheese.
